The View...excerpt from 'Inside the Dragon's Heart'

The View

Clouds billowing into vivid pictures

Visible only through childlike imagination
The blueness of the sky behind them
Shines like a brilliant sapphire

The crispness of the winter’s air
Invigorates the awaiting lungs
The snow begins to gently fall
Blanketing the mountains and the valley beneath

The line between heaven and earth
Fades from view as the mountain peaks slip
From emerald green to a marshmallow white
Untouched perfection captivating the inhabitants below

The wonderment of winter
The view that takes a breath away
Picture perfect and postcard worthy
The view awaits its beholding

I love to bake

Baking has becoming a cathartic release for me over the years. As a chef, I served hundreds of people a myrriad of different food but I always come back to my passion of baking.

This time of year is amazing for me. All the fresh BC fruit to choose from, I chose 3 of my favorites and created this pie.

Blueberries from Fraser Valley, Apples from Pitt Meadows and Cherries from Chilliwack. To make it even better, I used a 2008 **Twisted Tree** Rosado to macerate the fruit in first.

Served with a strawberry ice cream, it made the end of the season just perfect!

Next is prepping for my Annual Christmas Cookie Tray Orders. (pricing to follow soon)

Mega Fruit Muffins

SHER'S BC FRESH FRUIT MEGAMUFFINS

INGREDIENTS

3 1/2 c. flour
1 cup sugar [1]

 5 tsp. baking powder
1 1/2 tsp. salt
2 beaten eggs [2]
1 1/2 cup milk [3]
1/2 cup shortening

1/4 cup blueberries [4]

1/2 cup diced apples [5]

1/2 cup diced peaches [6] optional

1 tsp cinnamon

Stir together flour, sugar, baking powder, and salt; make a well in center. Combine eggs, milk, and shortening, and add all at once to dry ingredients, stirring just until moistened. Fill greased or paper-lined muffin tins two-thirds full. Bake at 375 degrees for 25-30 minutes. Makes 9-12 Texas muffins or 18-24 muffins.

You can also use chopped walnuts, coconut, almonds, dried cranberries, raisins as well as changing up cinnamon for nutmeg or all spice to make it seasonal.

Freezes well.
